Cashew Cilantro & Lime Crema/Dressing

My to go dressing and goes with anything and everything. Just a few healthy ingredients go in a blender and we are good to go! Replace traditional processed mayonnaise with cashews which are very creamy plus cholesterol-free, sodium free and a great source of healthy fat. Adding a fresh herb like cilantro, tang with lime and a little spice kick with jalapeño yum yum yum...Spread it on a bun, drizzle on a taco and or salads of your choice.


· Cashew- 1/2 cup (soak in water for 2-3 hours or 30 mins covered in hot water drain and rinse)

· Water-1/2 cup

· Jalapeno-1/2 or 3-4 slices

· Cilantro-1 cup leaves and tender stems

· Garlic- 1 clove

· Lime- 2-3 tbsp

· Ground cumin - 1/2 tsp

· Salt-1/2 tsp or to taste

  1. Place all the ingredients in a high speed blender and blend till smooth. Enjoy with burgers or as a dressing on salads.
