Ingredients Servings -2

  • 4 tbsp chia seeds

  • 1 cup Pistachio/Almond milk

  • 1 tablespoon or more maple syrup

  • 1/2 teaspoon vanilla extract

  • 1/4 tsp cardamom (optional)

  • 2 tsp Lemon juice

  • 1 tsp Lemon zest

  • Raspberry compote (1 cup fresh or frozen raspberries, 1 tbsp maple syrup, 2 tsp lemon juice & lemon zest)

  • Toppings- raspberries, pistachio.

Instructions:

  1. In a medium-sized bowl, whisk together the chia seeds, pistachio milk, sweetener (if using), and vanilla extract.

  2. Let the mixture sit for 5 minutes, then whisk again to make sure there are no clumps of chia seeds.

  3. Cover the bowl with a lid, and place it in the refrigerator for at least 2 hours or overnight.

  4. Make raspberry compote- Mix all the ingredients for the compote in a small sauce pan.Cook the mixture over medium heat, stirring occasionally, until the raspberries begin to break down and release their juices, about 5-7 minutes. Remove the pan from heat and let the raspberry compote cool to room temperature. Once cooled, transfer the compote to a jar or container and store in the refrigerator until ready to use.

  5. After the chia pudding has set, give it a good stir to make sure there are no lumps.

  6. To assemble: Spoon the raspberry compote on the bottom of the serving bowl and add half of the chai pudding on top. Top more raspberries and chopped pistachios. You can also serve the chia with other toppings you like, such as fresh fruit, nuts, or granola. Enjoy your delicious and healthy chia pudding!
