I love this time of the year! Fall is filled with warm & inviting flavors & colors. The aroma of earthy spices -cinnamon, cloves, nutmeg- fills up my kitchen with warmth. And nothing screams fall more than the bright orange colored pumpkins & apples! To best capture my fall favorites on a plate, I kick started with spiced pumpkin pancakes topped with cinnamon apples. These pancakes are so fluffy, soft, full of spice & everything nice! Try it and your these will make your taste buds tingle with joy!
Dry Ingredients-
· All-purpose flour/Whole wheat/Oat flour (you can do half & half ) or Gluten Free Flour mix– 1cup
· baking powder -1 tsp
· baking soda-1/2 tsp
· Salt- 1/4th tsp
· Pumpkin Spice – 1 tsp (Mix ground cinnamon-1/2 tsp, ginger -1/2 tsp, cloves -a pinch, cardamom- 1/4th tsp, nutmeg-1/8th tsp)
· Cinnamon-1/4th tsp
Wet Ingredients-
· Soy or Almond milk– 3/4th -1 cup
· Lemon juice – 1tbsp
· Pumpkin puree-1/3rd cup
· 1 Tbsp melted vegan butter or Coconut oil
· Vanilla extract- ½ tsp
· Brown Sugar or Coconut sugar- 2-3 tbsp
· Maple syrup or Agave – 1 tbsp
Cinnamon Apples-
· Granny Smith Apple – 1 small diced
· Cinnamon – ½ tsp
· Maple syrup- 1 tbsp
· Vegan butter or coconut oil- 2 tsp
· Vanilla extract- ½ tsp
· Salt- pinch
Directions:
Prepare Cinnamon Apples
1. Dice apples into ½ inch same-sized pieces. Put apple pieces into a skillet with 2 tbsp water. Cover the pan and cook until the apples become slightly soft and water is absorbed about 5 mins.
2. Add vegan butter or oil to the skillet, stir the apples till coated. Cook for a few mins until the apples are soft.
3. Add Maple syrup, cinnamon, salt and vanilla. Stir until well mixed.
4. Remove from heat and set aside.
Pumpkin Pancakes
1. Mix the wet ingredients in a large bowl.
2. Mix the dry ingredients in another bowl and sift to mix evenly. Add to the wet ingredients and mix using a whisk.
3. Heat a griddle or a skillet. Spray or drizzle oil, if it’s a non-stick pan you don’t need any oil. Pour about 4-5 tbsp or less than 1/4th cup of batter on the pan. When edges are a little dry flip-it over to cook the other side (about 1-2 mins each side). You should get about 10 small sized pancakes. Drizzle maple syrup, top with cinnamon apples, pecans & raisins. Enjoy!
