Ingredients:

  • 7-8 peeled, thin sliced apples (mix of Granny Smith or Honeycrisp)

  • 2 tbsp lemon juice

  • 1/2 cup coconut sugar

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1 tsp fresh grated ginger or 1/2 tsp ground ginger

  • 3 tbsp cornstarch

  • 1/4 teaspoon salt

Topping:

  • 1 cup rolled oats

  • 1/2 cup all-purpose flour

  • 1/2 cup almond flour or meal

  • 1/2 cup chopped nuts (such as walnuts or pecans)

  • 1/4 cup coconut or olive oil

  • 1/4 cup softened plant-based butter

  • 1/2 cup coconut or brown sugar

  • 1/2 teaspoon ground cinnamon

  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, combine the sliced apples, lemon juice, maple syrup or agave nectar, cinnamon, nutmeg, and salt. Toss until the apples are well-coated and then transfer the mixture to a greased 9x13 baking dish.

  3. In another bowl, mix together the rolled oats, all-purpose flour, almond flour, chopped nuts, melted coconut oil, plant-based butter, coconut sugar, cinnamon, and a pinch of salt. Stir until the mixture forms a crumbly texture.

  4. Sprinkle the oat and nut topping evenly over the apple mixture in the baking dish.

  5. Bake in the preheated oven for 40-50 minutes or until the apples are tender, and the topping is golden brown.

  6. Remove from the oven and let it cool for a few minutes before serving.
